This quick and easy salad may become one of your all time favorites.
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: Minutes
Ingredients

10 Cups Romaine Lettuce, torn
2 T. Pitted Black Olives, halved or chopped
3 Plum Tomatoes, cut into wedges - or Grape Tomatoes, halved.
1/2 Medium Cucumber, cut in half lengthwise and sliced
4 Oz. Feta Cheese, crumbled - or substitute Parmesan
1/2 Cup Italian Dressing

Directions
Step 1  Step 1:
Toss lettuce, black olives, tomatoes and cucumbers together in a large bowl. Drizzle with dressing mixture; sprinkle with cheese. Makes 4 Servings
 
Step 2  Variation:
Grill a marinated flank steak (you can use the same type of dressing that you are using to put on the salad - discard after you've marinated the meat - use fresh dressing for the salad) and cut on the bias to top the salad for a Grilled Flank Steak Greek Salad. Serve with a warmed pita wedges.
